Directions
- In a medium mixing bowl combine flour, sugar, baking powder, cinnamon and salt.
- In a small mixing bowl, add eggs and whisk lightly. Add milk and vanilla and melted butter, whisking thoroughly.
- Add wet ingredients to dry and stir until fully blended and free from lumps. Do not over mix. Batter should be thick but pour easily. If required, add flour or milk a teaspoon at a time, to adjust batter consistency.
- Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately or keep warm in a pre-heated oven at 275°F (135°C).
Tips & Tricks
- Before adding melted butter to mixture, allow to cool one minute. If the butter is too hot, it can start to cook the eggs right in the mixing bowl.
- Freeze any left-over waffles and you can reheat them in the toaster for a quick a tasty breakfast or snack.
